Back To School Kid Friendly Eats

We all know that the beginning of the school year is a whirlwind! Gathering school supplies, rearranging schedules, and corralling your kiddos can create an environment of overwhelming chaos. Here are a few 20 minutes or less meals that are not only healthy but quick and tasty for both kids and parents!
Garlic Burrata Pasta - 15 Minutes

Ingredients:
1 lb Pasta - whatever you have in the pantry (measurements for a family of 4)
3 Tbsp Butter
2 Tbsp Garlic
1 Tsp Red Pepper Flakes (optional)
2 cups Heavy Cream
Juice of 1 Lemon
2 Tsp Black Pepper
1 Cup Parmesan
1 container of Burrata (8 oz)
Fresh Basil (optional)
Lemon Zest (optional)
Start off by bringing a heavily salted pot of water to boil and cook your pasta according to instructions.
While the pasta is cooking, melt the butter in a frying pan on medium heat. Add in red pepper flakes and garlic, sauté until fragrant - about 1 minute. Slowly whisk in heavy cream until butter is combined. Add lemon juice, black pepper, and a spoonful of the salted pasta water. Allow to simmer on low. Add your pasta, turn off heat, and fold in parmesan cheese - stirring until melted.
Divide into bowls and top with a ball of burrata, lemon zest, freshly chopped basil, and a sprinkle of black pepper. Enjoy!
Pro tip: Sauté ground meat on the side and mix in to get an extra serving of protein!
Pro pro tip: Add in spinach with the heavy cream or steam broccoli on the side for an extra veggie delight!
