Back to school is HERE! These hot honey chicken bites are a perfect after school snack or sneaky delicious meal for your picky eater. This is also a fun recipe to include your kiddos in! Feel free to omit the spicy portion and make sure to pair with their favorite veggie.


Hot Honey Chicken - 25 Minutes



Ingredients:


Chicken Bites:

1 lb Chicken - Dice to bite size pieces (measurements for a family of 4)

3 Cups of Corn Flakes

1/4 cup All Purpose or Gluten Free Flour

2 Tsps Garlic Powder

2 Tsps Salt (course works best)

1 Tsp Black Pepper

1 1/2 Tsps Paprika

2 Large Eggs

1 Tbsp Water

3 Tbsp Avocado or Olive Oil


Hot Honey:

1/2 Cup Honey

2 Tsp Red Pepper Flakes

1/2 Tbsp Apple Cider Vinegar

1 Garlic Clove


Preheat your air fryer to 375 degrees. Cube your chicken into bite size pieces. Combine corn flakes, flour, garlic powder, salt, pepper, paprika in a food processor or you can use a ziplock bag and a rolling pin. They should be bread crumb consistency.


In a separate medium size bowl whisk eggs and water together. Take your bite size pieces and dredge them in the egg mixture one at a time. Then coat them in the cornflake mixture. Repeat both steps until chicken is coated.


Spray the air fryer basket with cooking oil. Place as many pieces of chicken inside. Cook chicken for 4 minutes then flip them and cook for an additional 4 minutes. You may need longer depending on your air fryer!


While chicken is cooking place small saucepan on the stovetop on medium heat. Add honey, red pepper flakes, apple cider vinegar, and garlic and bring to a gentle boil.


Once chicken is finished pour directly over or divide into small bowls for dipping!


Pro tip: Make sure to double dredge your chicken to help make it super crispy!


Pro pro tip: You can always add more, you can't take away. Make more cornflake and egg mixture if you run out! Start off lightly with the spices in the hot honey sauce if you are unsure.


Pro pro pro tip: Pair with roasted broccoli and potatoes, asparagus and sweet potatoes, or basic carrots and celery!
